GE Freezer not defrosting

So every 2-4 months my evaporator fan in the freezer fan stops blowing because of ice build up. At that point the freezer stops cooling and anything inside it begins to defrost. I typically take everything out, take off the panel, clear the ice on the coils, and everything works fine again.
This is becoming a hassle so I've been researching the issue. It seems that it is usually a defrost timer that is the culprit. However, I can't find a defrost timer in my user manual or anywhere online for this model.
Is it possible my fridge doesn't have a defrost timer? If not, how does it know when to start/stop defrosting?
